Cole slaw is a salad which is usually made from shredded, raw white cabbage. Many other food items are added to the cole slaw to add different flavors. Other vegetables that you could choose to add include shredded carrots and shredded red cabbage. Many people like to add fruits to their slaw, such as pineapple or apple.

 

The cole slaw is then mixed with a dressing, usually with a vinegar-like base, but mostly you will find creamy-based slaw, which is made from mayonnaise or milk. Before serving, the dressing should settle on the mixed ingredients before serving. Cole Slaw is a lovely side dish which complements barbequed foods; fish and chips, as well as other fried creations. Below you will find a variety of cole slaw recipes that are low in fat.

 

 Low-Fat Marinated Cole Slaw

 

Ingredients

3 1/2 cups cabbage, coarsely shredded
1 1/4 cups red cabbage, coarsely shredded
1 cup carrot, coarsely shredded
1 cup celery, diced
1/2 cup onion, chopped
3/4 cup cider vinegar
1/4 cup sugar
1 1/2 tablespoons vegetable oil
3/4 teaspoons dried mustard
1/2 teaspoon celery seeds

 

Directions

1) Combine first 5 ingredients in a large bowl, toss gently and set aside.

2) Combine remaining ingredients in a small saucepan.

3) Heat over low heat until sugar dissolves, stirring constantly.

4) Cool dressing mixture to room temperature.

5) Pour vinegar mixture over cabbage mixture and toss to coat.

6) Cover and marinate in refrigerator for a few hours, stirring occasionally.

 

 

Tangy Low Fat Cole Slaw

 

Ingredients

1/2 cup nonfat yogurt

1 1/2 tablespoons cider vinegar 

1 tablespoon splenda
1 tablespoon fresh dill weed, snipped (1 teaspoon dried dill)
1 teaspoon prepared horseradish, drained
1/2 teaspoon dry mustard
Salt and pepper to taste   

4 cups finely shredded cabbage
 1 cup grated carrots

 

Directions

1) Line a colander or sieve with a coffee filter or a few layers of cheesecloth.

2) Add the yogurt; cover and let set and drain at room temperature for at least 2 hours or overnight in the refrigerator.
3) Transfer the drained yogurt to a bowl and whisk in the vinegar, splenda, dill, horseradish, mustard, and salt and pepper to taste.

4) Whisk until smooth.
5) In a large bowl, combine the cabbage and carrots.

6) Stir in the dressing and toss to coat evenly.

7) Chill for at least one hour.

 

 

Low-Fat Cole Slaw

 

Ingredients

 

1 cup Fat-Free Miracle Whip

¼ cup Sugar

8 cups Cabbage, finely chopped

½ cup Carrots, shredded, then minced

2 tablespoons Minced Onions

 

Directions

 

1) Combine Miracle Whip with sugar in a large bowl

2) Mix well with electric beater until sugar is dissolved.

3) Add cabbage, carrot& onion and toss well.

4) Be sure cabbage and carrot are chopped into very small pieces, about the size of rice

5) Cover and chill for at least 2 hours before serving, but is best if allowed to chill overnight

 

 

Magic Cole Slaw

 

This cole slaw is 39 calories. When using Hellmann’s mayonnaise, keep in mind that there are several low-fat and non-fat options.

 

Ingredients

1 cup Hellmann’s Low Fat Mayonnaise Dressing

2 tablespoon Cider Vinegar

4 packages Equal or other sweetener

1 teaspoon Salt

¼ teaspoon Dry Mustard

¼ teaspoon Celery Seeds

1 head of Cabbage, finely shredded

 

Directions

1) In a large bowl, mix these ingredients together using a wire whisk

2) Add a 1/2 cup of water and whisk.

3) Add a shredded head of cabbage

4) Mix the dressing with the cabbage and let rest for at least fifteen minutes.

5) Stir again before serving
