Low-Fat Baked
Apples
Ingredients
1 medium-large
Granny Smith apple per person
brown sugar
mixed dried
fruit
cinnamon
Directions
1) Remove
the core from the apples, leaving skin on and hole through the
middle.
2) Place in baking dish and add a small amount of brown
sugar into the holes.
3) Fill with mixed
fruit
4) Sprinkle cinnamon
to taste.
5) Pour small amount of water in bottom of dish and
place in a 325-350-degree oven until the apples are cooked through
and the sugar in the filling has melted.
6) Serve with low-fat
custard or ice-cream.
Microwaved Baked Apples
Ingredients:
2 apples
2 tablespoons brown
sugar
1 teaspoon ground
nutmeg
1 teaspoon ground
cinnamon
5 sprays of I Can’t
Believe It’s Not Butter or other substitute butter spray
Directions:
1) Core the apples,
leaving the bottom intact on the apples.
2) Mix the brown
sugar, cinnamon and nutmeg in a bowl.
3) Spoon the sugar
mixture into the apples.
4) Spray the tops of
the apples with the substitute butter spray.
5) Place the apples
in a deep casserole dish and cover.
6) Microwave for 3
1/2 to 4 minutes or until tender.
7) Let the apples
sit for a couple minutes before serving.
Low Fat Apple Bran
Muffins
(Makes 12
Muffins)
Ingredients:
1 1/2 cups wheat
bran
1 cup low-fat
buttermilk
1 cup all-purpose
flour
1/4 cup packed
brown sugar
1 teaspoon baking
soda
2 egg whites
1/2 apple, grated
Directions:
1) In a small bowl,
combine the bran and buttermilk.
2) Set the bowl
aside to soak for 10 minutes.
3) Preheat the oven
to 350 degrees.
4) Lightly grease a
muffin pan, or use paper liners.
5) In a large bowl,
mix together the flour, brown sugar and baking soda.
6) Stir in the bran mixture and
egg whites. Fold in grated apple. Divide batter into 12 muffin
cups.
7) Bake in
preheated oven for 16 to 18 minutes, or until a toothpick inserted
into the center comes out clean.
8) Allow to cool
for 5 minutes before removing from the pan.
Low- Fat, Low Calorie
Apples
Ingredients
1 apple, cored
and peeled
2 tablespoons unsweetened orange or apple juice
1/8
teaspoon cinnamon
1 pinch nutmeg
2 tablespoons raisins
Directions
1) Peel and core
apple.
2) Place each apple
in an individual glass casserole
3) Fill the center
with raisins.
4) Pour juice over
raisins.
5) Sprinkle with
cinnamon and nutmeg.
6) Cover with wax
paper and bake in the microwave on high about 2 min. per apple until
tender. Serve warm.
