Low-Fat Glazed Chicken In Crockpot

By Jo Anne Merrill (makes 6 servings)

This recipe takes 8 minutes to prepare.

Ingredients

6 oz orange juice, frozen concentrate

3 chicken breasts; split

1/2 ts marjoram

1 ds ground nutmeg

1 ds garlic powder

1/4 c water

2 tb cornstarch

Directions 1) Combine thawed orange juice concentrate (not regular orange juice) in bowl along with the marjoram, garlic powder and nutmeg. 2) Split the chicken breasts to make 6 serving sizes.

3) Dip each piece into the orange juice to coat completely.

4) Place in crockpot. 5) Pour the remaining orange juice mixture over the chicken. 6) Cover and cook on low for 7-9 hours, or cook on high for 4 hours if you wish cooking. 7) When chicken is done, remove to serving platter.

8) Pour the sauce that remains in crockpot into a saucepan. 9) Mix the cornstarch and water and stir into the juice in pan. 10) Cook over medium heat, stirring constantly, until thick and bubbly.

11) Serve the sauce over the chicken.

Low Fat Potato Soup

(Makes 8-10 servings)

Ingredients

6 c. cubed peeled potatoes

5 c. water

2 c. chopped onion

1/2 c. chopped celery

1/2 c. thinly sliced carrots

1/4 c. stick margarine

4 tsp. Wyler’s very low-sodium chicken bouillon granules

1/4 tsp. pepper

1 can (12 oz.) fat-free evaporated milk

3 T. chopped fresh parsley

Snipped chives

Directions

1) In a large slow cooker, combine the first 9 ingredients.

2) Cover and cook on high for 7 hours or until the vegetables are tender.

3) Add milk and parsley

4) Mix well. 5) Cover and cook 30-60 minutes longer or until heated through.

6) Garnish with chives if desired.

Crockpot Baked Beans

Ingredients

1 pound dried navy beans, rinsed and soaked overnight

6 c water

3/4 c molasses

1/2 c black coffee

1/4 c firmly packed dark brown sugar

1 Tbsp cider vinegar

2 tsp dry mustard

1 1/2 tsp salt

1/4 tsp freshly ground black pepper

1 onion peeled, cut in half -- stuck w/4 cloves Directions

1) Combine beans & water in slow cooker

2) Cover and cook on low heat for 7 hours until tender.

3) Drain and refrigerate in pot. 4) Stir together molasses, coffee, sugar, vinegar, mustard, salt & pepper in small bowl.

5) Stir into beans in pot.

6) Add onion, pushing down into beans.

7) Cook, covered, on low heat for 7 hours, or until beans are flavored through.
